Homemade Granola

Ingredients
  

  • 10 cups old fashioned oats
  • 3 cups flaked coconut
  • 3 cups shredded coconut
  • 4 cups mixed nuts see above
  • 3 cups mixed seeds see above
  • 1 cup brown sugar
  • 2 cups vegetable oil
  • 1 tbs salt
  • 1 tbs vanilla
  • 1 tbs cinnamon
  • 4 cups mixed dried fruit

Instructions
 

  • Mix oats, two types of coconut, mixed nuts and mixed seeds in a large bowl.
  • Mix the vegetable oil, brown sugar, cinnamon and salt in a small mixing bowl.
  • Add the vegetable oil mixture to the mixture and stir until evenly combined.
  • Placed in a large high sided baking dish.
  • Place in the oven at 300°F.
  • Stir the mixture every 15–30 minutes. Make sure to mix the oats along the sides of the baking dish and the bottom of the baking dish into the center of the mixture to ensure even cooking.
  • The oats and the coconut will turn a deep brown color.
  • Let the oats cool then add dried fruit as desired and mix to combine.
