Authentic Greek Tzatziki

A thick yogurt and cucumber sauce to serve with just about everything

Ingredients
  

  • 1 medium English cucumber
  • 3 cloves garlic peeled
  • 1 cups whole fat Greek yogurt
  • 1 tbsp Salt
  • Juice of one lemon
  • Olive oil to drizzle over the top

Instructions
 

  • Cut the cucumber lengthwise so you have two even halves and have exposed the seeds in the center. Use a teaspoon to scoop the seeds out of the cucumber and discard the seeds.
  • Next, coarsely grate the cucumber halves and place in a colander. Sprinkle with 2 tsp salt and stir the salt into the grated cucumber. Let sit at least 30 minutes to 2 hours.
  • While the cucumber is draining, pass the peeled garlic cloves through a garlic press and add into the yogurt.
  • Then add the lemon juice to the yogurt mixture.
  • Lastly, add the drained, grated cucumber to the yogurt and stir to distribute evenly.
  • Right before serving, drizzle the tzatziki liberally with olive oil.
